- Hutchins BBQ was started in 1978 as “Roy’s Smokehouse” in Princeton, Texas; originally a small establishment connected to Roy’s home. By 1991, Roy’s Smokehouse had become such a local favorite that Roy had to move to a bigger location.

- In 2012 there was a devastating fire at the restaurant in McKinney. However, in 2013 rising from the ashes; Hutchins BBQ smoked its way into Texas Monthly’s “Top 50 BBQ Joints in the World.” With business booming; The Hutchins decided to open a new location in Frisco, Texas to become their catering headquarters.
- There was another fire on New Year's 2020 which shuttered the McKinney location until Aug 23, 2021.
